Stir-Fry made with a variety of veggies and flavored with tomatoes.

Recipe Ingredients for Tomato Stir-Fry

4 ounces sun-dried tomatoes, chopped
200 grams red pepper, sliced
250 grams celery, chopped
200 grams carrots, chopped
1 ounce ginger root, grated
1/2 ounce garlic, chopped
85 gram onion, sliced
2 tsp italian seasoning
1 tbsp canola oil
1 tbsp soy sauce
1/2 cup ketchup
1 1/2 cup water

Recipe Directions for Tomato Stir-Fry

  1. Lightly fry ginger, garlic, onions in oil and soy sauce.

  2. Add all other vegetables.

  3. Sprinkle with italian seasoning.

  4. Mix ketchup and water together and add to veggies.

  5. Allow stir-fry to simmer for 15-20 min on medium (depending on your desired crunchiness).

  6. Serve hot with rice (brown or white), millet or cous cous.
