Recipe Ingredients for Tomato Stew

1 T olive oil
5 medium tomatoes
1/2 c. mushrooms
1 medium onion
1 clove garlic
28 oz ground tomatoes
1 green pepper
1/4 cup fresh basil
3 stalks celery
1 T dried oregano
1 t dried rosemary

Recipe Directions for Tomato Stew

  1. Quickly blanch the tomatoes and let them cool. Peel off the skin and coarsely chop them.

  2. In a large saucepan, heat oil on med-high heat and add chopped tomatoes and garlic. Cook until soft.

  3. Add tomatoes and ground tomatoes. Add herbs and celery, green pepper and mushrooms.

  4. Simmer on low heat for approximately 45 minutes and then let rest until room temperature. Place in individual containers and add protein for a complete meal.
