Recipe Ingredients for Tomato, Squash and Spinach Curry

2 tbsp extra virgin olive oil
2 onion
100 g rogan josh paste
811 g butternut squash
890 g tomatoes
200 g spinach

Recipe Directions for Tomato, Squash and Spinach Curry

  1. Slice the onion and fry in the olive oil until just softened.

  2. Add the curry paste and cook for 3 minutes.

  3. Add butternut squash, in chunks, tomatoes, quartered and 400ml water. Cover and simmer for 15 minutes.

  4. Stir through spinach and serve.
