Recipe Ingredients for Tomato Squash Soup

200 g leeks
280 g tomatoes
280 g tomato
280 g squash
16 oz silken tofu
1 T white wine vinegar
4 serving Low Sodium Vegetable Broth

Recipe Directions for Tomato Squash Soup

  1. Healthy saute onions.

  2. Add broth and bring to a boil. Add vegetables and simmer until tender. (15-30 min)

  3. Working in batches, transfer to blender and puree until deseired consistency. Add tofu and vinegar, pulse to combine. Season with salt and pepper.

  4. Serve topped with parmesan.
