Yummy served with my garlic and herb dough balls. We added 3 laughing cow extra light cheese triangles ontop before we add the breadcrumbs and cheese.

Recipe Ingredients for Tomato and spinach pasta bake

8 ounces dried pasta, penne
400 grams canned tomatoes,chopped
1 tablespoon tomato puree
1 medium onion, finely chopped
2 garlic cloves, pureed
1 teaspoon dried basil
4 ounces swiss chard, chopped
2 ounces cheese, grated
2 ounces breadcrumbs, wholewheat
1 tablespoon olive oil
1 salt and pepper, season to taste

Recipe Directions for Tomato and spinach pasta bake

  1. Cook the pasta and set aside.

  2. Heat the oil and fry the onions until soft, then fry the garlic for 2 minutes. Add the tomatoes, tomato puree and spinach and cook for a further 5 minutes season to taste with the salt and pepper.

  3. Place cooked pasta into an oven proof dish and pour over the sauce, sprinkle over the top with the basil, mix pasta and sauce together(If you want to use the cheese triangles,cut each triangle in half and layer it evenly on top)

  4. Now spinkle the cheese and breadcrumbs over the top covering evenly and bake in a pre heated oven gas mark 5 for 25 minutes or until top has melted and turned a golden brown.
