Makes 12 servings



These have roasted tomatoes and wilted spinach. I usually serve 2 or 3 of them at a time. I usually eat 2 and my boyfriend will eat 3.

Recipe Ingredients for Tomato & Spinach Egg Muffins

10 eggs
1 cup milk
1 tomato
2 cups spinach
2 tablespoons olive oil
1 teaspoon salt
1 teaspoon pepper
1 ounce shredded mozzarella cheese

Recipe Directions for Tomato & Spinach Egg Muffins

  1. Slice tomato and drizzle with 1 tablespoon of the olive oil.

  2. Sprinkle with salt and pepper.

  3. Roast in a 300 degree oven for about 30 minutes.

  4. Beat eggs and milk in a bowl.

  5. Add the other 1 tablespoon of olive oil to a skillet and heat with spinach until wilted and soft.

  6. Chop roasted tomato slices after they have cooled.

  7. Spray muffin tin with nonstick spray.

  8. Divide the tomato pieces and spinach into the muffin molds.

  9. Sprinkle with a little more salt and pepper if desired.

  10. Pour enough egg mixture over each mold to cover tomatoes and spinach.

  11. Sprinkle cheese over each one.

  12. Bake in oven for about 15 - 20 minutes.

  13. Can store in the fridge for up to one week in an airtight container. Just warm up in the mornings for breakfast!
