Recipe Ingredients for Tomato, Spinach, and Basil Soup

2 tbsp butter
1/4 cup yellow onion
1 tsp garlic, minced
1 tsp flour
1 1/2 cups milk
28 ounce tomato puree
1 tbsp sugar
2 cups spinach
2 tsp basil
1/2 tsp salt
1/4 tsp black pepper

Recipe Directions for Tomato, Spinach, and Basil Soup

  1. Melt butter in large saucepan over medium heat.

  2. Coarsely chop onion. Cook onion and garlic in butter for 3 minutes, stirring occasionally.

  3. Sprinkle onion with flour and cook for 30 seconds, stirring constantly.

  4. Stir in milk and cook for 2 minutes, stirring occasionally.

  5. Stir in tomato puree and sugar. Cover and bring to a boil over high heat. Stir soup, reduce heat to low, and simmer, covered, for 5 minutes.

  6. While soup is cooking, tear spinach into bite-sized pieces and discard stems. Stir spinach, basil, salt and pepper into soup and simmer, uncovered, for 2 minutes, stirring occasionally. Sprinkle with parmesan cheese if desired.
