Not a diet food, however you could reduce more calories using fat-free or low-fat cheeses. Try that next time. If you want a drier quiche, eliminate the skim milk and drain the tomatoes.

Recipe Ingredients for Tomato, Spinach & Basil Quiche

1 cup shredded italian cheese
1 1/4 cup shredded sharp cheddar cheese
1/4 cup grated parmesan cheese
2 tbsp olive oil
1/2 medium onion, diced
3 tomatoes, sliced
2 cups spinach, sliced
2 frozen pie crust, deep dish
2 tbsp basil
1 tbsp parsley
2 tsp onion powder
2 tsp garlic powder
6 large eggs
1/4 cup light mayo
3/4 cup light cottage cheese
1/4 cup light feta cheese, crumbled
1/8 cup skim milk

Recipe Directions for Tomato, Spinach & Basil Quiche

  1. Set oven to 400 and bake both frozen pie crusts for 8 minutes. Slice onion and brown in pan with 2 tbsp of olive oil. Slice onions and fresh spinach. Add to pan with 2 tbsp basil, onion powder, garlic powder, and parsley. Combine cheeses in bowl and mix well. Combine eggs, mayo, cottage cheese, more basil, skim milk, Feta cheese in another bowl. Take out pie crusts. Layer cheese on both bottoms, split up the warmed tomatoes, spinach and onion and put on top of cheese (leave in clumps). Split egg mixture and pour over each. Add cheese layer to top off egg.

  2. Cover in foil and back each for 45 minutes. Uncover and bake an additional 15 minutes.
