Recipe Ingredients for tomato soup

14 oz Tomatoes
6 serving Extra Virgin Olive Oil
2 tsp Salt, Table
1 tsp Pepper, Black
1 stalk, medium (7-1/2" - 8" long) Celery
1 small (5-1/2" long) Carrots
1 small Onions
2 clove Garlic
1 cup Soup, Chicken Broth
2 tbsp Butter
1/4 cup leaves, whole Basil, Fresh

Recipe Directions for tomato soup

  1. Preheat oven to 450 F

  2. Strain tomatoes, reserving juices

  3. Spread onto a baking sheet; season with salt and pepper; drizzle with 1/4 c of olive oil

  4. Roast until caramelized - 15 minutes

  5. In a saucepan, heat remaining olive oil over medium-low

  6. Add celery, carrot, onion and garlic; cook until softened - 10 minutes

  7. Add tomatoes, reserved juices, chicken broth, bay leaf and butter

  8. simmer until vegetables are very tender - 15 to 20 minutes

  9. Add basil (and 1/4 c of heavy cream if using)

  10. Puree with a hand held immersion blender until smooth
