Recipe Ingredients for Tomato Soup

2 medium carrots
2 stalk celery
2 medium onions
2 cloves of garlic
2 tbsp extra virgin olive oil
2 vegetable stock cubes
800 g plum tomatoes
6 large tomatoes

Recipe Directions for Tomato Soup

  1. Roughly chop carrots, celery, onions and garlic.

  2. Put large pan on medium heat and add olive oil.

  3. Add chopped ingredients to pan and cook for 10 minutes with lid askew.

  4. Put stock cubes into jug and add 1.8 litres of boiling water.

  5. Add stock, tinned and whole tomatoes to the saucepan with the chopped vegetables.

  6. Bring to the boil.

  7. Reduce heat and simmer for 10 minutes with the lid on.

  8. Season with salt and pepper and blend until smooth.
