A low fat tasty tomato soup (I hope!)

Recipe Ingredients for Tomato Soup

500 g tomatoes
1 onion
1 carrot
50 g celery
1 tsp olive oil
1 tsp tomato sauce
20 oz vegetable stock
1 pepper

Recipe Directions for Tomato Soup

  1. Chop everything into small pieces.

  2. In a saucepan add the oil, cook the onion, carrot & celery on a medium heat for 10 minutes or until soft.

  3. Add tomato purée and stir in.

  4. Add all the tomatoes.

  5. Add seasoning and cook for 10 minutes.

  6. Pour in stock.

  7. Turn up the head to high and the soup is bubbling then lower heat and simmer for 25 minutes.

  8. Optional: purée the soup in the blender to make it smooth.

  9. This can be frozen.
