Easy tomato soup - Happy Herbivore

Recipe Ingredients for Tomato Soup

28 oz Tomatoes Whole Plum Italian Style
36 oz. Low sodium vegetable broth
2 tsp Onion Powder
1/2 tsp Garlic Powder
1 1/2 tsp Italian Seasoning
1 serving White Vinegar
8 oz Carrots, Baby
2 tsp Curry Powder

Recipe Directions for Tomato Soup

Pour the tomato liquid from the can into a large soup pot. Take the tomatoes out one by one and gently squeeze into the pan, then dice into bite sized pieces. Add the broth, seasonings, vinegar and minced carrots. Cover and bring to a boil, reduce to low and simmer 25 minutes.
