A healthy, spicy take on tomato soup.

Recipe Ingredients for Tomato Soup (Mexican Style)

3 roma tomatoes
1 serrano pepper
2 tsp olive oil
15 oz canned diced tomatoes in juice
1/2 cup diced onion
1 clove garlic, minced
2 cups low-sodium chicken broth
1/4 cup cilantro, finely chopped
3 tbsp lime juice
2 tsp honey or agave nectar
1 1/2 tsp salt
1/2 tsp pepper
1/4 corn tortilla

Recipe Directions for Tomato Soup (Mexican Style)

  1. Quarter and de-seed the tomatoes. Remove stem and cut serrano pepper in half. Toss in one tsp of olive oil and roast in 500 degree oven for about ten minutes.

  2. Saute onions and garlic in the other tsp of olive oil in a pot until softened. Add roasted tomatoes and peppers to pot along with the rest of the ingredients (minus a couple tablespoons of cilantro) and puree with an immersion blender.

  3. Simmer over low-med heat for about ten minutes. While simmering, warm the tortilla over a griddle until crisp. Cut tortilla in half and then into 1/4-inch strips.

  4. Serve soup with tortilla strips and cilantro for garnish.
