Again, I usually make one serving at a time.

Recipe Ingredients for Tomato Skillet

1 yellow squash
1 cup broccoli
1 cup cauliflower
2 cups carrots
1 cup tofu
1/2 cup diced tomatoes

Recipe Directions for Tomato Skillet

Cook everything together and simmer until done. Add more water if necessary. I always add herbs and I often use the diced tomatoes with chiles.
