Tomato Sausage Soup Recipe

Add tortellini or pasta if you like. Serve with a salad.

Recipe Ingredients for Tomato Sausage Soup

5 cup Light
2 cup Crushed Tomatoes
1 cup, diced Celery
8 oz Baby Cut Carrots
1 cup, chopped Onions
1 tbsp Extra Virgin Olive Oil
1 tsp Sea Salt
1 tsp Pepper, Black
1 serving Cayenne Pepper
3 serving Garlic Cloves
3 serving turkey sausage

Recipe Directions for Tomato Sausage Soup

  1. Dice celery, carrots, onion and garlic.

  2. Put olive oil in a pot. When heated, add celery, carrots and onion. Cook on low/med. heat for about 10 minutes.

  3. Add garlic and cook another minute or two.

  4. Add half a 2/3 can of crushed tomatoes. Increase heat to medium high and cook for 5 more minutes.

  5. Add tomato mixture to a blender and blend until smooth. Ingredients are hot, so be careful. I usually add half a can of broth to this to cool the temp. down.

  6. Meanwhile, remove casings from sausage and crumble and brown the meat. Add a little chicken broth to deglaze the pan.

  7. Pour tomato mixture into the pot, add the remaining chicken broth and the browned sausage.

  8. Add salt, pepper and cayenne pepper to taste. Cook for another 5 - 10 minutes.
