Recipe Ingredients for Tomato/Sausage Risotto

1 c Arborio rice
2 c diced tomatoes
2 c low sodium chicken stock
1 c water
4 oz Italian Sausage
1 c onion, finely chopped
1 t garlic, chopped
1/4 c white wine
2 oz baby spinach
1/4 c parmesan, grated
1/2 T butter
1 dash salt
1 dash black pepper

Recipe Directions for Tomato/Sausage Risotto

  1. Combine canned tomatoes (1 28 oz can) and chicken stock, heat over low heat.

  2. In separate pan, heat olive oil; add sausage, garlic and onions, crumbling sausage as you go. Add rice after onions have softened, stir for a minute to combine. Add wine, and stir until it's absorbed.

  3. Add 2 cups of tomato/broth mixture, stirring to combine and absorb (about 5 minutes). As the liquid is absorbed, keep adding more, a little at a time, and stirring frequently to get the starches out of the rice. Repeat until it has a creamy texture - about 25-30 minutes. Off the heat, add the parmesan, spinach, and butter. Stir to combine; taste for seasoning (may need a little salt and pepper).

  4. Serve with extra cheese if desired.
