If you're canning, stick closely to the recipe, adding additional fresh vegetables will change the pH so it's unsafe for water-bath canning. If you're freezing it, then it's fine to throw in peppers and mushrooms, fresh garlic, whatever you want. The recipe below makes 1+ quarts, the full recipe makes 6-7 quarts. You can use a combination of pint and quart canning jars, or freezer boxes. FULL RECIPE: 10 quarts tomato puree (30 pounds of tomatoes) 4 large onions, chopped 1 C dried basil C honey 4 T dried oregano 3 T salt 2 T ground dried lemon peel 2 T dried thyme 2 T garlic powder 2 T dried parsley 2 tsp pepper 2 tsp cinnamon tsp nutmeg

Recipe Ingredients for Tomato Sauce

80 oz Tomatoes, Red, Ripe
1 medium (2-1/2" dia) Onions
2.67 tbsp, ground Basil, Dried
1 1/2 tbsp Honey, Strained Or Extracted
2 tsp Oregano, Ground
1 tsp Salt, Table
1 tsp Lemon Peel
1 teaspoon Thyme
4 clove Garlic
1 tsp Parsley, Dried
1/4 tsp Pepper, Black
1/4 tsp Cinnamon, Ground
0.13 tsp Nutmeg, Ground
1 tbsp Lemon Juice, Canned Or Bottled

Recipe Directions for Tomato Sauce

  1. Soften onions in large pot?add a small amount of water if necessary but no oil if you're canning (very important!).

  2. Add pureed tomatoes and all seasonings, bring to a boil, and simmer on low heat for two to three hours until sauce has thickened to your liking.

  3. Stir frequently, especially toward the end, to avoid burning.

  4. Meanwhile, heat water in canner bath, sterilize jars in boiling water or dishwasher, and pour boiling water over jar lids.

  5. Once sauce is done, add 1 T lemon juice, to quart jar (or T to pint jar). This ensures the sauce will be safely acidic.

  6. When the sauce is ready, ladle it into jars, leaving 1/2-inch headspace.

  7. Cap jars, lower gently into canner and boil for 35 minutes.

  8. Remove, cool, check all seals, label, and store for winter.
