Recipe Ingredients for Tomato (sauce)

64 ounces tomatoes, diced
1/4 cup kalamata olives
1/2 cup red wine
2 tablespoons olive oil
1 large onion
5 tablespoons garlic
25 ounces pasta
4 hot red peppers

Recipe Directions for Tomato (sauce)

  1. saute onions in olive oil. add garlic and four dried hot red peppers. continue sauteing until onions are soft and clear on low enough heat they don't caramelize (too much). Add olives. add canned diced tomatoes including liquid. bring to a simmer and reduce heat, still simmering. add wine. simmer till cooked, about half an hour then add basil and oregano to taste (a couple tablespoons).

  2. good with hot italian sausages.
