Tomato sauce that is fresher and more delicate than most sauces.

Recipe Ingredients for Tomato Sauce

1 medium raw Plum Tomato
1 cup, chopped Carrots
1 cup, diced Celery
1 cup, chopped Onions
0.25 tsp Sugars, Granulated
0.5 cup Olive Oil

Recipe Directions for Tomato Sauce

wash tomatoes in cold water. cut in half and cooked in covered stockpot over medium heat for 10 minutes. Add the diced carrots, onions and celery, sugar and salt and cook uncovered for another 30 minutes. Puree everything in a food mill, return to pan, add the olive oil and cook at a steady simmer uncovered for another 15 minutes. Taste and correct for salt.
