This tomato salad can be served with your favorite grilled meat or mixed with cooked whole wheat pasta. Very fresh and light.

Recipe Ingredients for Tomato Salad / pasta topping

4 tomatoes, preferably different colors
1/2 small red onion
1/4 c. fresh basil, shredded
1/4 c. fresh mint, shredded
1 garlic clove, crushed in press
1 tsp Lemon peel
1 tbsp lemon juice
1 tbsp olive oil
1 tbsp vinegar, red wine

Mix all ingredients. Let stand at room temperature for 30 minutes.
