The goat cheese is the french version, but you can substitute fresh mozzarella as they do in Italy, or feta cheese, as they do in Greece. The cheese makes it so the meat or fish course can be reduced or eliminated.

Recipe Ingredients for Tomato Salad with Fresh Goat Cheese

4 cups Mesclun, or mixed salad greens
4 large tomatoes, washed and sliced
2 T minced shallots
1 t mustard
2 T vinegar
6 T olive oil
8 oz fresh goat cheese
1 salt
1 pepper, freshly ground
4 T parsley,chopped at last minute,or basil

Recipe Directions for Tomato Salad with Fresh Goat Cheese

  1. Cover each plate with a layer of mesclun or mixed greens. Place sliced tomatoes on top. Salt generously.

  2. Mix the dressing ingredients into an emulsion.

  3. Crumble the goat cheese onto tomato slices.

  4. Season with salt and pepper to taste. Pour the dressing on top. Add the chopped parsley. Serve with a slice of country bread.
