Recipe Ingredients for Tomato Roasted Cod

24 oz Cod
7 medium raw Tomato Roma
1 tbsp Olive Oil
1 onion Yellow Onion
1/4 cup leaves, whole Basil, Fresh
5 tsp Sugars, Granulated

Recipe Directions for Tomato Roasted Cod

  1. Preheat the oven to 450. Grease a baking dish large enough to fit the fish fillets in a single layer.

  2. In a saucepan over medium heat, warm the olive oil. Add the onion and sauté, stirring often, until tender and translucent, about 10 minutes. Add the garlic and sauté for 1-2 minutes. Stir in the tomatoes and cook over low heat until the sauce thickens, 15-20 minutes. Season to taste with salt and pepper. Taste the sauce; if the tomatoes are too sour, add the sugar. Stir in half of the parsley, half of the basil, and half of the thyme and simmer for 2 minutes to allow the flavors to blend.

  3. Place the fillets in the prepared baking dish. Spoon the tomato sauce evenly over the top. Bake until the fish is opaque when pierced with the tip of the knife, 8-10 minutes. Sprinkle with the remaining herbs and serve at once.
