Recipe Ingredients for Tomato Risotto in Minutes

4 tbsp butter
1 clove garlic, minced
1 onion, chopped
28 oz can diced tomatoes with basil, garlic and oregano (151836)
1 1/2 cups Arborio rice or other short-grain rice (20052)
15 oz can tomato sauce
1/2 cup grated Parmesan cheese

Recipe Directions for Tomato Risotto in Minutes

  1. In a 4-quart microwave-safe dish, combine butter, garlic and onion. Microwave on HIGH for 2 minutes. Place diced tomatoes in the dish. Microwave until hot but not boiling (2 minutes).

  2. Stir in the rice; cover and microwave on HIGH for 6 minutes. Stir in tomato sauce and microwave on HIGH for an additional 10-12 minutes or until liquid is gone. Stir in cheese and serve.
