Recipe Ingredients for Tomato Rice Soup (with tofu)

1 T. olive oil
162 g onion, chopped
242 g. green pepper, chopped
6 oz. tomato paste
1/2 cup brown rice
7 oz. firm tofu
4 tsp. chicken bouillon
1/2 tsp dried basil
1/2 tsp dried oregano
1/4 tsp. cayenne pepper
1 T. white vinegar
1 tsp. liquid smoke

Recipe Directions for Tomato Rice Soup (with tofu)

  1. Saute onion, green pepper, tomato paste and rice in olive oil.

  2. Add 3 cups or so of water and simmer for 40-45 minutes.

  3. Meanwhile, process tofu, 1/2 c. water and bouillon until smooth.

  4. Combine, add spices, smoke and vinegar to taste. Simmer 5 minutes.
