From Veganomicon, p. 137. Calls for 1 tsp dried marjoram, but we were out. Use two garlic bulbs and 2 bay leaves. The recipe does not call for vegetable broth; we had leftover that we needed to use, so we substituted for half the water with broth.

Recipe Ingredients for Tomato-Rice Soup with Roasted Garlic and Cannelini

24 cloves or 2 heads garlic
2 tbsp olive oil
1 medium yellow onion, diced
1 c long-grain brown rice
1 gram or 2 bay leaves
2 tsp dried thyme
1 1/2 tsp salt
56 oz crushed tomatoes
28 oz water
28 oz vegetable broth
15 oz cannelini beans, drained and rinsed

Recipe Directions for Tomato-Rice Soup with Roasted Garlic and Cannelini

  1. Preheat the oven to 425 F. Cut the top 1/2 inch off each garlic head and drizzle with 1 tbsp olive oil. Wrap tightly in foil and roast for 30-45 minutes, until soft.

  2. Preheat a soup pot over medium heat. Saute the onions in 1 tbsp olive oil for 5-7 minutes, until translucent.

  3. Add the rice, bay leaves, thyme, marjoram, salt, and a pinch of ground black pepper, and cook, stirring, for about 2 minutes. Add the crushed tomatoes, then fill up the can with water twice and add the water. (Or use vegetable broth.)

  4. Bring to a boil, lower the heat to medium-low, cover, and simmer for about 45 minutes.

  5. When the garlic is cool enough to handle, squeeze the roasted garlic out of its skin and into a small bowl. Use a fork to mash the garlic to a relatively smooth consistency, then add to the soup once the rice is nearly tender.

  6. When the rice is completely cooked, add the beans and heat through. Then it's ready to serve - remove the bay leaves beforehand.
