Recipe Ingredients for Tomato and Rice

100 g brown rice
1 tbsp olive oil
1 small onion
1 garlic clove
8 mushrooms
1/2 green pepper
100 g sweetcorn
1 tinned tomatoes

Recipe Directions for Tomato and Rice

  1. cook the rice

  2. fry the onion, garlic, mushrooms and pepper in oil

  3. after a few minutes, add the cooked rice, tomatoes, sweetcorn, herbs and vegetable stock

  4. mix together
