Makes 6 servings



An excellent way to use over ripe tomatoes. Use on toast or toss with pasta (possible to cut out butter, but I like onions sauteed that way better)

Recipe Ingredients for Tomato Relish

32 oz Tomatoes, Red, Ripe
16 oz Squash, Summer, Zucchini, Includes Skin
1/2 cup, sliced Onions
1/2 stick Butter
1 tsp Sea Salt
1 tsp Pepper, Black
2 tbsp Vinegar Balsamic
3 serving Minced In Oil Garlic
1 T brown sugar

Recipe Directions for Tomato Relish

  1. Saute Onions and Garlic in butter

  2. Chop tomatoes and zucchini, add to onions and garlic

  3. Add Salt & Pepper & Basalmic to to taste

  4. Cook down to desired thickness (approx 2 hrs)
