Recipe Ingredients for Tomato/Red Pepper/Black Bean Soup

1 medium raw Bell Pepper Red
1.5 cup Black Beans
4 large whole (3" dia) Tomatoes, Red, Ripe
0.13 medium (2-1/2" dia) Onions
4 clove Garlic
0.5 tbsp Olive Oil

Recipe Directions for Tomato/Red Pepper/Black Bean Soup

  1. Chop onion and garlic and saute in olive oil.

  2. Chop tomatoes and red bell pepper and put in pot with onion and garlic.

  3. Let simmer until reduced by about a quarter.

  4. Add black beans and seasoning of choice and let simmer until you're ready.

  5. Blend together and serve with an oz. of cheese and a piece of crusty bread.
