Southern bread-pudding dish with tomatoes.

Recipe Ingredients for Tomato Pudding

1587 g (2 cans, 28 oz each) tomatoes, canned, crushed, with juice
220 g (1 cup, packed) brown sugar
170 g (1 can, 6 ounces) tomato paste
6 3/5 g (1 tsp.) dry mustard
6 g (1 tsp.) salt
2/5 g (1 dash) baking soda
105 g (3 cups) white bread, cubed, toasted
227 g (1/2 cup) butter, melted

Recipe Directions for Tomato Pudding

  1. Grease a 3-quart baking dish.

  2. In a bowl, combine tomatoes, sugar, paste, mustard, soda, and salt.

  3. Place bread cubes in baking dish; drizzle with melted butter.

  4. Pour tomato mixture over bread.

  5. Refrigerate up to four hours, if desired.

  6. Bake at 375 F for 35 to 40 inutes, or until hot and bubbly.

  7. Garnish with fresh parsley springs, if desired.

  8. Serves 8 to 10.
