a fresh tomato pie made with onions, bisquick, and a cheese and mayo topping. This version substitutes reduced calorie feta cheese.

Recipe Directions for tomato pie

Mix individual pkg of bisquick using half nonfat milk and half water. Bake at 450 until golden brown per pkg directions. Place another pie tin over the crust to avoid rising. Place layers of thinly sliced tomatoes (2 lbs) and onions with fresh basil, oregano, cilantro, salt and pepper in the baked crust. Squish together one container of reduced fat feta cheese crumbles with 1/3 cup Miracle Whip light and spread over the top of the pie. Bake at 350 until the top is browned. 20 - 30 minutes.
