Quiche-like tomato and cheese pie dish

Recipe Ingredients for Tomato pie

3 tomatoes
1 onion, sliced into 1/3 inch thick rings
1 3/8 cup flour
3/4 cup fat free evaporated milk
6 tbs olive oil
1 tbs nonfat milk
1/2 tsp sugar
1/4 tsp salt
8 oz shredded part skim mozzarella
1 egg

Recipe Directions for Tomato pie

  1. Prepare crust by combining 1 cup flour, 5 tbs olive oil, salt and sugar

  2. Roll into a ball, then roll out out into a circle to lay in the bottom of a 9 inch pie dish

  3. Dredge tomatoes in flour, then saute in 2 tbs olive oil on a preheated pan; turn so that both sides are lightly browned and crispy

  4. Layer onions at bottom of dish

  5. Place 2/3 of your cheese on top of onions

  6. Place Tomatoes on top of cheese

  7. Mix together egg, evap. milk, and remaining cheese, then pour on top of entire pie.

  8. Bake at 375 for 40-45 minutes.
