Use fresh ripe tomatoes to make an old favorite summer pie.

Recipe Ingredients for Tomato Pie

1 baked pie crust
3 large fresh tomatoes
1 small onion
3/4 cup mayonnaisse
4 oz. shredded cheddar

Recipe Directions for Tomato Pie

  1. Place tomato and onion slices in baked crust.

  2. Add salt and pepper if desired.

  3. Mix mayonnaise and cheese and spread over the top of the tomatoes.

  4. Bake 15 minutes at 400, then turn oven down to 350 and bake 25 minutes more, or untill cheese just starts to brown a bit.
