mayo is modified to get the right calorie count. Really used 1/2 cup kraft mayo with olive oil.

Recipe Ingredients for Tomato Pie

1 pastry crust
1 tbs olive oil
1 yellow onion, chopped
3 cups chopped tomatoes
1/4 cup sliced basil
1 teaspoon tabasco
1 cup Gruyere cheese
1/2 cup Monterey Jack Cheese
1/2 cup sharp cheddar cheese
1/8 cup mayonaise

Recipe Directions for Tomato Pie

  1. caramelize the onions in olive oil

  2. deseed/squeeze tomatoes before chopping to reduce liquid

  3. chiffonade basil

  4. combine remaining ingredients in a separate bowl

  5. pastry crust in pan

  6. add onions

  7. spread tomatoes over onions

  8. sprinkle basil over tomatoes

  9. spread cheese mixture over the top

  10. bake at 350 until bubbly and lightly brown, about 25-45 minutes.
