Recipe Ingredients for Tomato Pie Filling

4 tomatoes, medium
1 cup onion, chopped
1/2 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons basil, chopped
1/2 cup mayonaise
1/2 cup parmesan cheese, grated
1 cup cheddar cheese

Recipe Directions for Tomato Pie Filling

  1. Preheat oven to 375F.

  2. Cut 6 tomato slices for garnish, set aside.

  3. Halve remaining tomatoes, and cut each each half into 6 wedges.

  4. Place half edges in bottom of pie shell.

  5. Sprinkle with 1/2 onion, 1/4 salt and pepper and 1 tablespoon basil.

  6. Stir mayonnaise, parmesan and cheddar together and spread half over onion layer.

  7. Repeat layers.

  8. Place reserved tomato slices in pinwheel design in pie centre.

  9. Bake 30-40 minutes until golden.

  10. Allow pie to cool for 20 minutes before serving.
