Easy side dish, customize by adding beans, ground beef or turkey and other spices or herbs.

Recipe Ingredients for Tomato Pepper Rice

1 1/4 cups jasmine rice, cooked
2 cups diced tomatoes, raw
1/2 cup sweet red pepper, chopped
1/2 cup onion, chopped
1 teaspoon garlic, minced
1 tablespoon olive oil
1/4 teaspoon black pepper, ground
1 teaspoon red pepper flakes, crushed
1/2 teaspoon paprika

Recipe Directions for Tomato Pepper Rice

  1. Saute' peppers, onions and garlic in olive oil.

  2. Add tomatoes ( use canned, no salt for convenience)

  3. Bring to a boil, add COOKED rice.

  4. Stir in seasonings, customize to your taste.

  5. Simmer 10 minutes.

  6. TIP: Freeze some for later use.

  7. Adapts well to add-ins!
