Recipe Directions for Tomato/pasta sauce

In dutch oven, pour canned tomatoes. Begin to stew over medium heat. Add in vegetables as cut up. Add in fresh tomatoes with skins and seed but without cores. Simmer on low-medium heat for 2-3 hours or until all vegetables are tender. Let cool in pot. In food processor or blender, process tomatoes and vegetables until pureed smooth. Use a smaller pot to pour full blender jugs into until all tomato mixture is blended. Pour all of pureed tomato back into dutch oven and warm gently. Does not need to be boiling to be jarred. Wash and sterilize canning jars and lids. Ladle tomato sauce into prepared jars and place on lids. Screw bands fingertip tight. Place jars in water bath for 35-40 minutes. Store in a cool dry place. Use as needed, add spices and tomato paste to taste. Yield 6 jars, 5 500ml, 1 250ml.
