A basic pasta dish with homemade tomato sauce. It is easy on the sodium, and does not overdo it on the carbs.

Recipe Ingredients for Tomato Pasta

1 tbsp olive oil
1 onion, small, chopped
4 fresh plum tomatoes, canned, chopped (lowest sodium variety)
1/2 cup low sodium tomato juice
1/4 black pepper
1/4 tsp sugar
2 tbsp chopped parsley (or 1 tsp dried)
5 oz pasta, macoroni, eniched, cooked

Recipe Directions for Tomato Pasta

In a saucepan, saute the onion in oil until soft, but not brown. Add tomatoes, pepper, and sugar. Cover and cook over low heat, stirring often, for another 5 minutes or until tomatoes are cooked down to a sauce. Stir in parsley. Then stir sauce mixture in with cooked macaroni.
