Recipe Ingredients for Tomato pancakes

1/3 cup olive oil
1/3 cup canola oil
2 cups flour
4 cups tomato
2 cups basil
1 1/2 cups water
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder

Recipe Directions for Tomato pancakes

  1. Mix all ingredients except oils together to form pancake-like batter (water and flour amounts may vary depending on juiciness of tomatoes and how thick you want the batter).

  2. Fry in oil (or in non-stick pan with less oil) over medium-high heat. Hotter the oil, quicker the fry, less oil soaked into patties. This trades with spattering and burning, of course.
