Recipe Ingredients for Tomato Nests

4 large tomatoes
4 large eggs
4 tbsp heavy cream
4 tbsp grated parmesan
1 salt and pepper

Recipe Directions for Tomato Nests

Preheat oven to 350 degrees. Cut tops off of tomatoes and carefully scrap out the pulp. Please on a paper towel upside down to let drain for about 15 minutes. Salt and pepper the insides. Place tomatoes in a dish that is large enough to hold one layer. Break 1 egg into each tomato. Top with 1 tbsp of cream and 1 tbsp of parmesan Bake for 15-20 minutes or until eggs are set. Serve hot.
