Low fat alternative to meat based sauce

Recipe Ingredients for Tomato-Mushroom Bolognese

411 g diced tomatoes
3/4 cup tomato sauce
1 onion
1 carrot
1 celery stalk
1/2 cup mushrooms
1/2 cup fennel
1 garlic clove
1/2 cup grated parmesan cheese
1/4 cup fat free milk
6 ounces Whole Grain Linguine

Recipe Directions for Tomato-Mushroom Bolognese

  1. Chop all fresh vegetables in a food processor. Cook linguine according to package instructions.

  2. Combine tomatoes, tomato sauce, onion, carrot, celery, mushrooms, fennel garlic and 1/8 tsp of black pepper in a 5 or 6 qt. slow cooker.Cover and cook until vegetables are softened, about 3 1/2 hours on low.

  3. Stir together 1/4 cup parmesan cheese and milk in a small bowl; stir into the vegetable mixture. Cook 30 minutes onger. Add cooked linguine and toss until mixed well. Serve with remainder of grated cheese
