Tomato, Mushroom, and Basil Quiche

Recipe Ingredients for Tomato, Mushroom, and Basil Quiche

1 cup chopped mushrooms
1 chopped tomato
1/2 tablespoon oregano
1/2 tablespoon basil
2 tablespoons Balsamic Vinegar
1 cup shredded mozzarella
1/4 cup parmesan cheese
1/2 teaspoon pepper
1/4 cup half and half
2 large eggs
1 frozen pie crust
1 sliced tomato

Recipe Directions for Tomato, Mushroom, and Basil Quiche

  1. Mix mushrooms, chopped tomato, oregano, basil, balsamic vinegar, and pepper in a bowl.

  2. Heat half and half up over medium heat. Add in mozzarella and parmesan, slowly, until it's melted through. Add to mushroom-tomato mixture, and add the eggs. Stir thoroughly.

  3. Pour into pie crust, and add sliced tomatoes on top. Cook at 350 until the middle comes out clean.
