Vegetarian Soup - quick to make and eat :) Season as you prefer I add Paprika and a pinch of dried chilli.

Recipe Ingredients for Tomato and Lentil Soup

840 grams tinned tomatoes
100 grams Carrot
100 grams Leek
175 grams Onion
22 grams stock cube
1 litre water
50 grams lentil

Recipe Directions for Tomato and Lentil Soup

  1. Chop the Onion and Leek finely. Peel the carrot and grate add to a pan with a little of the water and bring to a boil.

  2. Tip the juice from the canned tomatoes in and add your seasonings, chop the canned tomatoes and add to the pan.Add the lentils, stock cubes and the remaining water

  3. Bring to a boil then simmer for approximately 20 mins until all the vegetables are cooked and the lentils are soft.

  4. Serve with accompaniments of your choice.
