use leek in place of onion, or beans in place of lentils

Recipe Ingredients for Tomato and Lentil Soup

1 tbsp vegetable oil
1 onion, chopped
3 garlic cloves, chopped
800 g canned tomatoes
1 tbsp tomato puree
1000 ml water
1 tsp sugar
1 tsp salt
150 g green lentils
3 tbsp parsley, chopped

Recipe Directions for Tomato and Lentil Soup

  1. Saute onion and garlic in a large saucepan.

  2. Stir in tomatoes, tomato puree, stock, sugar, seasoning and bay leaf.

  3. Boil, cover and simmer for 30 mins. Discard bay leaf.

  4. Process in a blender, stir in cooked lentils and reheat gently.

  5. Add the chopped parsley and serve.
