Adapted from David Rocco This delicious soup, is filling and healthy. I suggest not skimping on the olive oil, as its part of what gives it its lush texture. You can also use canned lentils if you like. The amount of lentils i've used is an approximation, I actually sure about 1.5 to 2 cups dried, cook them until soft, drain and then make the soup. lentils expand approx two times their original size. cooking dried lentils takes about 20 minutes. prep is about 5 min, cooking time is about 10-15

Recipe Ingredients for Tomato Lentil soup

3/4 cup olive oil
3 cloves garlic, minced
1 red chili pepper, minced
1 cup parsley, minced
2 cans whole tomatoes, with juice
4 cups lentils, mature seeds
3 cups of water, approx
1 beef bullion cubes, optional

Recipe Directions for Tomato Lentil soup

  1. Heat 1/2 cup olive oil in a pot that will hold at least 2 litres. Add garlic, chili and parsley and cook for about 1 min.

  2. Add whole tomatoes, breaking them up with a wooden spoon, add water and allow to cook for a minute or two, breaking up what's left of the tomatoes. Add lentils stir and check consistency. If too think add more water, you may or may not need to add a bit of tomato paste or coulis to make the flavour stronger if you've added too much water. All to cook together and thicken a bit.

  3. If you find that the soup tastes a little thin, add beef bullion(stock) cubes. It brings out the tomato flavour even more. If you're making the vegetarian version, add a bit of tomato coulis or paste (i use no sodium added). Also a vegetable stock cube should also do to trick

  4. Add remaining olive oil before just before serving. You can also season with soup with oregano, thyme and basil, or an Italian spice mix. If you decide to do that, add it when you add the parsley.

  5. You can also sprinkle on some Parmesan on top if you like. This soup is also great next day as a gaspatchio.
