Recipe Ingredients for Tomato Lentil Soup

1 large onion, diced
2 large bell peppers, chopped
2 teaspoons minced garlic
1 teaspoon dried thyme
4 cups water
1 cup lentils
1 teaspoon salt
1/4 teaspoon pepper
28 ounce diced tomatoes

Recipe Directions for Tomato Lentil Soup

  1. Spray pot with non-stick cooking spray.

  2. Add onion, garlic and thyme.

  3. Cover and cook until soft, but not browned.

  4. Add water, lentils, bay leaf, salt and pepper.

  5. Bring to a boil, reduce heat and simmer, covered, 30 min, or until lentils are tender.

  6. Stir in tomatoes.

  7. Simmer ten min to blend flavors.
