Recipe Ingredients for Tomato & Lentil Soup

2 onion
4 large tomatoes
2 tbsp oil
8 oz lentils
600 ml tomato juice
40 g vegetable stock cubes
1800 ml water
1 tsp thyme
1 tsp yeast
20 g salt
4 g black pepper

Recipe Directions for Tomato & Lentil Soup

  1. Chop the onions and skinless tomatoes.

  2. Heat the oil in a saucepan and sauté onions until transparent.

  3. Add the remaining ingredients, cover and simmer for 30 minutes.

  4. Adjust seasoning to taste.

  5. Blend the soup to make it smoother. (Optional)
