Recipe Ingredients for Tomato & Leek Torte

4 large tomatoes, sliced
1 cup basil, chopped
12 ounces mozzarella cheese
6 ounces Italian cheese blend
1 cup grated parmesan cheese
1 1/2 cup mayonnaise
1 tbsp lemon juice
3/4 lb bacon, cook crisp and crumbled
3 leeks
2 pie crusts, deep dish

Recipe Directions for Tomato & Leek Torte

  1. Brown the pie crusts until slightly golden.

  2. Slice tomotoes about 1/3 in. thick, lay flat on paper towels and sprinkle both sides of tomatoes with salt (this will make the tomatoes sweat, let stand for about 20-30 minutes, then pat dry.

  3. While tomatoes are sweating, saute leeks until wilted and dry (any liquid in pan has evaporated)

  4. Mix together cheese, crumbled bacon, chopped basil, mayo, salt, pepper, and lemon juice.

  5. Assemble: spread leeks on pie crust, layer of cheese mixture, layer some of the tomatoes, another lay of cheese, finish with sliced tomatoes.

  6. Bake at 350F for about 30 minutes, until cheese is bubbly and golden.
