If you buy "flavored" canned diced tomatoes (basil/oregano) this is a wonderful low-cal Italian Quiche for dinner.

Recipe Ingredients for Tomato Lace Quiche

2 cup White Rice
1 tbsp Parmesan, Grated Cheese
1 large Egg, Whole
1 tbsp ICBINB! Light (Soft)
1 cup Diced Tomatoes
1.5 oz Mozzarella, Part Skim Milk Cheese
3 tbsp Parmesan, Grated Cheese
3 large Egg, Whole
0.75 cup Low Fat Cottage Cheese
1 cup Milk

Recipe Directions for Tomato Lace Quiche

Mix 2 c cooked rice with 1 egg and 1 tbsp parmsan cheese. Press into a 9" baking pan and bake at 425 degrees for 3 minutes. Remove from oven and turn down to 350 degrees. In a saucepan, melt butter, add tomatoes and cheeses. Cook until well mixed. Add to rice crust. In a bowl, mix eggs, cottage cheese, and evaporated skim milk. Pour over tomato mixture in rice crust. Place baking dish on a baking sheet and cook in 350 degree oven for 35 minutes. Remove and let stand for 15 minutes. Serves 6.
