Recipe Ingredients for Tomato Kale Soup

4 cups chicken stock
1 1/2 T minced garlic
1 T olive oil
1/4 t paprika
1/4 t thyme
1/4 cup chopped parsley
1 cup canned tomatoes
2 cups chopped kale

Recipe Directions for Tomato Kale Soup

  1. In covered pot, bring stock to a boil. In a soup pot on low heat, gently saute the garlic in the olive oil until golden.

  2. Add the boiling stock and then stir in the paprika. Add the thyme and parsley.

  3. Simmer for 10-15 minutes. Add the tomatoes and simmer for another 10-15 minutes.

  4. Add the kale and simmer for an additional 2-3 minutes (until the kale is wilted).
