Penne pasta in a light tomato, caper, and kalamata olive sauce

Recipe Ingredients for tomato kalamata caper penne

3 roma tomatoes, diced
1/2 cup kalamata olives, chopped
3/4 tsp capers
2 cloves garlic, chopped
1 tbsp olive oil
1/8 tsp salt
1/8 tsp crushed red pepper
7 oz dry penne
2 tbsp parmesan cheese, shredded
2 tbsp fresh basil, chopped

Recipe Directions for tomato kalamata caper penne

  1. Cook penne pasta

  2. In a frying pan, heat olive oil

  3. Add garlic and crushed pepper and saute for 30 seconds

  4. Add tomatoes, capers, kalamata olives, and salt and simmer for 8 minutes

  5. Add pasta to sauce mixture and heat through

  6. Top with shredded parmesan and chopped basil
